Just in case anyone wasn't aware, this has been tried a bit in the past with Kiwi:
http://www.kiwiclient.org/
"A next generation e-mail client, built for IMAP and Mac OS X."
I'm not sure why it didn't take off- but it probably didn't help that Matt closed the source tree a while back:

He also built a framework called "MailCore", which is probably worth checking out:
http://www.mronge.com/m/MailCore/API/
It's built on top of libEtPan, which is an open source mail library:
http://www.etpan.org/libetpan/index.html
It's got a friendly open source license as well.
